Steps:
- Combine all ingredients except chicken in a large Ziploc bag. Seal bag and agitate to mix well. Add chicken and gently toss to coat. Press out as much air from the bag as possible and seal bag. Refrigerate bag for 30 minutes, flipping bag after 15 minutes. If using a charcoal grill, heat briquets. Arrange charcoal over one half of the grill. Place chicken on cooler side of grill, smooth side down, with thicker side towards hot side of the grill. Cover with a pan and cook for 9 minutes. Flip chcken and rotate so thinner side is toward hot side of grill. Re-cover with pan and cook for 9 minutes. Move chicken to hot side of the grill and cook uncovered until grill marks appear, about 2 minutes. Flip chicken and grill until grill marks appear on the other side, another 2 minutes. Transfer chicken to a plate or cutting board, tent with foil, and let rest for 5 minutes. Note: After brining, chicken may also be cooked in similar manner on a gas grill, or simply cooked normally in an indoor (Foreman) grill.
