Boiled Rockfish with Sauce image

Number Of Ingredients 16

1 (2- or 3-pound) rockfish, cleaned
1 onion slice
2 whole cloves
1 carrot
1 bay leaf
2 peppercorns
4 hard-boiled eggs, sliced
lemon wedges, for garnish
parsley, for garnish

1 1/2 - 2 cups white sauce mix
1 teaspoon lemon juice, or to taste
dash of red pepper
1/4 cup capers
1/2 teaspoon Worcestershire sauce (optional)
3/4 teaspoon salt and pepper

Steps:

  • Place cleaned rockfish in cheese cloth, tie closed, and drop in boiling salted water to which has been added a slice of onion, 2 whole cloves, carrot, bay leaf, and 2 peppercorns. Boil 6-10 minutes per pound. Lift out of water carefully and place on large platter before removing cheesecloth. Pour Sauce over fish and garnish with slices of hard-boiled eggs, lemon wedges, and parsley. Another garnish to use with rock is to render 6-8 slices of bacon which have been diced into small pieces, and pour the hot bacon grease and rendered bacon over the boiled rockfish. Sauce: Mix all ingredients together and set aside.
