Blueberry White Chocolate Banana Bread image

Ugh-- another banana bread recipe, you ask? Can there be too many? If you want ordinary Banana Bread this isn't it! It's moist, light and full of flavor! I like to make this into mini loaves, wrap, and give as gifts!

2 c all purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 tsp ground flax seed, optional
1 c sugar
4 Tbsp butter
2 large eggs
3 bananas, mashed
1/3 c low fat greek yogurt
1 tsp vanilla
1 c white chocolate chips
1/2-3/4 c fresh blueberries (tossed in 1 tablespoon flour)

Steps:

  • 1. Preheat oven to 350 degrees F. Spray 5 mini loaf pans or 1 9x5 loaf pan with nonstick spray.
  • 2. In a bowl, combine flour, baking soda, salt and ground flax seed. Blend with a whisk. Set aside.
  • 3. In a separate mixing bowl, beat butter and sugar with a mixer until well blended (about 1 minute.) Add eggs one at a time, beating well after each. Add the bananas, yogurt, and vanilla. Beat with mixer until well blended. Stir in flour mixture JUST until blended -- don't overmix! Fold in chips and then blueberries.
  • 4. Spoon batter into prepared pans. Bake mini loafs for about 35 minutes and 9x5 loaf for about 55 minutes or until toothpick comes out clean. Cool in pan for 10 minutes or so then remove from pan and cool completely on wire rack. These loafs freeze well!
