Blueberry Basil Barbecue Sauce image

I LOVE watching "The Kitchen" on FoodNetwork. Sunny's Blueberry BBQ Sauce looked really good, BUTm I had bottled Blueberry Basil Vinegar a few months earlier and thought, "Why not, instead of the Apple Cider Vinegar?" SO glad I did, it was awesome. I realize that you will have to bottle your own Blueberry Basil Vinegar first...

Number Of Ingredients 7

2 c blueberries
3 Tbsp sambal (red chile paste)
3 Tbsp ketchup
3 Tbsp brown sugar
3 Tbsp blueberry basil vinegar
1 large hot house tomato, diced
salt to taste

Steps:

  • 1. Combine all ingredients in a medium saucepan.
  • 2. Use a potato masher to smash up and macerate the blueberries and tomatoes.
  • 3. Cook until thick and bubbly (about 15 minutes). Store in a quart jar for up to 2 weeks.
