BLUEBERRY APPLESAUCE MUFFINS image

Number Of Ingredients 14

1 3/4 C all-purpose flour
3/4 C light brown sugar
1/2 C whole-wheat flour
2 t baking powder
1 t baking soda
1/4 t salt
1/4 t nutmeg
1 t cinnamon
1 1/4 C low-fat buttermilk
1 1/4 C unsweetened applesauce
1 egg
1 t vegetable oil
1 t vanilla
1 1/2 C fresh blueberries

Steps:

  • 1. Preheat the oven to 400. 2. Lightly coat a 16 cup muffin pan w/ cooking spray. 3. Mix together 1 1/2 C all-purpose flour, sugar, whol-wheat flour, baking powder, baking soda, salt, nutmeg, and cinnamon in a L bowl. Make a well in the center of the mixture. 4. Whisk together the buttermilk, applesauce, egg, oil, and vanilla in a small bowl. 5. Toss the blueberries in 1/4 C all-purpose flour to lightly coat the berries. 6. Pour the buttermilk mixture into the flour mixture and stir until the batter is just moistened. Fold in blueberries. 7. Divide the mixture evenly among the muffin cups. Bake for 20 minutes. Cool on a rack for 5 minutes.
