Steps:
- Preheat oven to 325. Heat medium skillet over medium hear for 2 minutes. Add the olive oil. Add mushrooms and oinon and saute for 4 minutes. Remove from heat and add cheese, salt and pepper adn blend well. Set aside. (If you double the amount of mushroom and green onions you can set aside half of the mixture to spoon over the finished pork chop.) Cut deep pocket in each pork chop, keeping the opening no wider than 1 inch. Stuff the blue cheese mixture in pork chop. Place chops in shallow pan and bake for 45 minutes.
