BLACKBERRY STREUSEL MUFFINS image

Number Of Ingredients 12

2 cups self - raising flour
1 ¼ cups frozen blackberries
1 medium apple, peeled, grated coarsely
¾ cup firmly packed brown sugar
3 eggs, beaten lightly
1/3 cup vegetable oil
1/3 cup buttermilk
Streusel Topping
1/3 cup plain flour
2 tsp brown sugar
1 tsp mixed spice
30g butter

Steps:

  • 1. Preheat oven to moderately hot. Grease 12-hole muffin pan. 2. Place flour in large bowl; stir in remaining ingredients. Spoon mixture into prepared pan. Coarsely grate streusel topping over muffins. Bake in moderately hot oven about 20 minutes. 3. Streusel Topping Combine flour, sugar and spice in small bowl; rub in butter.
