1 cup black rice, uncooked
1 cup cut trimmed fresh green beans (2 inch lengths)
1 ear corn on the cob, husks and silk removed
1 cup grape tomatoes, cut in half
2 green onions, cut into thin slices
1/4 cup chopped walnuts
1 lemon
1/4 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil

Steps:

  • Cook rice as directed on package, omitting salt. Cool rice completely.
  • Meanwhile, add beans to boiling water in medium saucepan; cook 5 min. or just until beans are crisp-tender. Drain beans; cool completely.
  • Spoon rice into medium bowl. Cut kernels off ear of corn. Add to rice along with the beans, tomatoes, onions and nuts; mix lightly.
  • Grate zest from lemon, then cut lemon in half and squeeze the juice from one lemon half. Discard remaining lemon half or reserve for another use. Add lemon zest and juice to rice mixture along with the dressing; mix lightly.
