FOR THE FILLING
3 pound(s) frozen dark sweet cherries, thawed and drained
3/4 cup(s) sugar
1/4 cup(s) cornstarch
2 tablespoon(s) lemon juice
1 teaspoon(s) vanilla
FOR THE BISCUIT TOPPING
1 1/4 cup(s) all purpose flour
1/2 cup(s) sugar
1/4 cup(s) unsweetened cocoa powder
1 1/2 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
6 tablespoon(s) butter, cut into small pieces
1/2 cup(s) semisweet chocolate chips
2/3 cup(s) buttermilk

Steps:

  • Preheat oven to 375F. Combine cherries, 3/4 cup sugar, cornstarch, lemon juice, and vanilla in large bowl; toss to coat. Spoon into 9-inch square baking dish.
  • Combine flour, 1/2 cup sugar, cocoa, baking powder, baking soda, and satl in medium bowl; mix well. Cut in butter with pastry blender or mix with fingetips until mixture resembles coarse crumbs. Stir in chocolate chips. Add buttermilk; stir just until combined. (Do not overmix.) Drop topping, 2 tablespoons at a time, into mounds over cherry mixture.
  • Bake 40-45 minutes or until filling is bubbly and toothpick inserted into center of biscuit comes out clean. Let stand 30 minutes before serving. Serve warm.
