Black-Eyed Peas Dip image

This dip would be great at a cookout, game night or even at a tailgate. The longer this dip sits, the better the flavors are. And, you're going to LOVE the dressing!

Number Of Ingredients 14

DRESSING
3/4 c balsamic vinegar
1/2 c olive oil, extra virgin
1/4 c sugar
2 tsp salt
1 tsp black pepper
DIP INGREDIENTS
4 can(s) black-eyed peas rinsed and drained, 15 oz each
1 c chopped green bell pepper
1 c chopped red bell pepper
1 c chopped yellow bell pepper
1 c chopped red onion
1 1/2 c cherry tomatoes quartered
1 c chopped fresh cilantro or parsley

Steps:

  • 1. Combine all dressing ingredients in a bowl and mix thoroughly to dissolve sugar and set aside.
  • 2. Rinse and drain peas well. Place in a large glass or aluminum bowl.
  • 3. Add remaining ingredients, peppers, onions, tomatoes, cilantro and dressing. Toss well. Transfer to a plastic container with a lid and refrigerate for at least 2 hrs before serving.
  • 4. Service with crackers or tortilla scoops. Enjoy!
