2 teaspoons vegetable oil
1 cup chopped onion
2 teaspoons garlic
1 cup nonfat chicken broth
3 cups black beans
2 tablespoons soy sauce
1/8 teaspoon red pepper flakes
1/8 teaspoon coriander
2 tablespoons orange juice
4 tablespoons low-fat sour cream
2 tablespoons chopped scallions

Steps:

  • Sauté onions and garlic in oil for 5 minutes.
  • Add the next 5 ingredients plus ¾ cup water.
  • Bring to a boil.
  • Simmer for 20 minutes.
  • Puree ¾ of the soup and return.
  • Stir in orange juice.
  • Simmer 5 minutes.
