Steps:
- In a sauce pan heat up some oil. Then add the chopped onions,celery,tomatoes and carrots.
- Saute the veggies until soft and then add the \ grated garlic and cook until raw smell of garlic is gone.
- Then add the cooked beans,salt to taste , black pepper, oregano and basil with 4 cups of water or vegetable broth.Cover and simmer for 20 minutes.
- If you add water then make sure to grind some soup in a blender before adding pasta to it. It makes the soup creamy, thick and more flavorful.
- Stir in the pasta and cook, uncovered, for 10 more minutes, until the pasta is cooked through.
- Serve with some grated Parmesan and red chili flakes if desired. I also added some avocado slices on top. Enjoy!
