Steps:
- Place the beans in a large stockpot with 8 cups water, bring to a boil, reduce heat, partially cover, and simmer for 1 hour, until the beans are tender. Drain and set aside. Season chicken with salt and pepper - brown in 2 Tbs. canola oil in soup pot - when well browned add broth, chili powder, cumin, coriander, bay leaves, oregano. Bring to boil and cook until breast are just cooked - about 20 minutes. Remove breasts and shred meat when cool enough to handle. In another pan, saute vegetables in 2 Tbs. canola oil. When very soft, add jalapeno, habanero, garlic, tomatoes - simmer 5 - 10 minutes. Add vegetables, black beans and barley to broth and cook until beans and barley are very tender. Add shredded chicken and cilantro to pot and cook about 10 minutes.
