BISHOPS BAKED MANICOTTI image

10 manicotti
1 1/2 cups ricotta cheese
2 large egg yolks
3/4 cup grated parmesan cheese, divided
1/4 cup grated monterey jack cheese
4 tsp. chopped fresh marjoram
1/2 tsp. grated nutmeg
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
3 cups Quick Tomato Sauce

Steps:

  • In a large saucepan of boiling salted water, cook manicotti for 5 minutes or according to the package directions. Drain and rinse under cold water. Place manicotti on clean towel. When stuffing, try stuffing from both ends of manicotti. In a large bowl, combine ricotta cheese, egg yolks, 1/4 up parmesan cheese, monterey jack cheese, marjoram, nutmeg, salt and pepper. Fill each of the manicotti with about 3 tbsp. cheese mixture. Place 1 1/2 cups tomato sauce on bottom of 13 x 9 inch baking dish. (33x23cm) Place filled manicotti on top. Spread remaining tomato sauce over manicotti. Sprinkle with remaining 1/2 cup parmesan cheese Cover with foil and bake at 375 F (190) for 40 minutes or until heated through.
