Steps:
- 1. Preheat the grill to medium high (bring down to medium if you have a problem with ribs burning) 2. Make the rub 3. Make the mop sauce. Put vinegar, salt and rub in nonreactive bowl, add 1 cup of water and whisk until salt dissovles (set aside) 4. Remove thin papery skin on the back of each rack of ribs. To do so, tick the tip of your knife under the membrane and pull off the membrane (fishing plyers work great). Generously season ribs al over with salt and pepper. 5. Place the ribs on the hot grill, bone side down and grill until that side is golden brown, about 25-30 minutes. Turn the ribs over and then grill the meat side until golden brown, which usually take another 30 minutes. Check often and reduce fire if it flames up. Make sure they are not burning. 6. Transfer ribs to a cutting board or platter. Generously brush or mop the ribs on both sides with the mop sauce and then thickly sprinkle the meat side with the remaining rub to form a crust. 7. Serve with the remaining mop sauce or your favorite bbq sauce. 8. enjoy!
