- Place beets in a bowl. In a small saucepan, place sugar, lemon juice, thyme, onion and salt and pepper heat and stir. When thoroughly heated, stir in sour cream and pour over beets. Chill and serve on individual plates covered with lettuce sprinkle with paprika and chives.
