Steps:
- Cook beets. (My favorite way is to trim the tops and roots and put them, unpeeled, into the microwave in a dish with ½ cup water, covered with plastic wrap. Microwave on "high" for 12-14 minutes - until the beets are tender - and then drain into colander and rinse with cold water.) After beets cool, peel skin and cube or slice. Put beets into serving dish. Combine balsamic and honey and salt and pepper in jar - make certain honey liquefies, rather than sticking to the bottom of the jar - and pour over beets. (They can marinate this way for an hour or so - no need to refrigerate if you are serving them soon.) Right before serving, top with blue cheese nuggets and nuts. (Nuts can be toasted for extra flavor depth.) Sprinkle with chopped parsley. Toss and serve.
