BEET SALAD ON A STICK image

Number Of Ingredients 6

3 tablespoons walnuts, chopped
8 ounces chilled goat cheese, rolled into 8 balls
8 wedges (2 ounce) roasted beet
24 fresh (baby) spinach leaves
3 tablespoons honey
8 bamboo toothpicks

Steps:

  • Pour walnuts into a shallow bowl. Roll goat cheese balls in walnuts to coat completely.
  • Thread 1 coated goat cheese ball onto a toothpick. Add beet wedge and 4 baby spinach leaves to the toothpick. Repeat with remaining toothpicks, goat cheese, beets, and spinach.
  • Drizzle each skewer with honey.
