BEER-BASTED BABY BACK RIBS image

Number Of Ingredients 10

6 cups beer
2 1/2 cups packed brown sugar
1 1/2 cups apple cider vinegar
1 1/2 tbs. chili powder
1 1/2 tbs. ground cumin
1 tb. dry mustard
2 tsp. salt
2 tsp. dried crushed red pepper
2 bay leaves
8 lbs. baby back pork ribs, cut into 4 rib sections

Steps:

  • 1. Bring first 9 ingredients to boil in very large pot. Reduce heat. Simmer 1 min, add ribs to sauce. Cover pot and simmer until ribs are tender, ( about 25 min.)Transfer to baking sheet. repeat with remaining ribs. 2. Boil barbecue sauce until reduced to 3 cups. ( 40 min). Discard bay leaves. (Can be made 1 day ahead. Cover ribs and sauce separately, refrigerate and rewarm) 3. prepare barbecue (medium heat). Brush ribs with some of the sauce, sprinkle with salt. Grill ribs until heated through, brown and well glazed, brushing with sauce, (about 6 min. per side). Transfer to platter, serve with remaining sauce.
