BEEF & VEGETABLE STEW image

Number Of Ingredients 15

12 oz. beef steak, cubed
1/8 tsp salt
1/8 tsp pepper
1 ½ tsp flour
1 ½ tsp vegetable oil
1 onion, chopped
1 garlic clove minced
½ cup canned crushed tomatoes
1 ½ cup beef broth
1 bay leaf
1 tsp thyme
3 carrots, ¼ in rounds
1 cup frozen peas, thawed
4 oz beer
2 tbsp parsley, minced

Steps:

  • Season beef and dredge in 1 ½ tsp flour seasoned with ¼ tsp salt and ¼ tsp pepper. Brown beef in oil for 2-4 minutes. Remove meat. Add onions and sweat. Add garlic and cook until garlic begins to color. Add beer, tomatoes, 1 cup broth, bay leaf, thyme, carrots and beef. Simmer covered in oven at 200° for 1 ½ hours. Add ½ cup broth if liquid is low. With 10 minutes remaining add peas. Serve with parsley as garnish.
