Beef Jerky image

My husband brought home some beef jerky made by a person at his work. This recipe is an attempt at making MY beef jerky taste as good at his. He sells his for $10.00/pound, a little steep for my budget. Hopefully this will be close! I didn't measure so these amounts are guesstimates.

2 pound(s) beef top round steak, boneless
3/4 cup(s) oil
1/4 cup(s) white vinegar
1 tablespoon(s) hot serendipity salt
1/4 - 1/2 cup(s) brown sugar, light
2 teaspoon(s) minced garlic in oil
2 teaspoon(s) crushed red pepper flakes
1 teaspoon(s) true orange, crystallized juice and oil
1/8 cup(s) worchestershire sauce
1/4 cup(s) liquid smoke flavoring, hickory
1/8-1/4 cup(s) soy sauce

Steps:

  • Mix all marinade ingredients in a gallon freezer bag.
  • Partially freeze beef so you can cut it in 1/8 inch slices easier. Before slicing remove all visible fat.
  • Put sliced meat in bag with marinade and leave at least 8 hours.
  • Preheat oven, smoker, or dehydrator to 175. Drain sliced, marinated meat. Meanwhile put parchment paper on large baking sheet and place large cooling rack on top. Separate meat slices and lay on cooling rack.
  • Placed prepared pan into dehydration method you prefer. If using a smoker you can just put rack in without pan if you prefer. Cook for 4 hours and check for doneness. Continue cooking if needed.
