Back in IL we had a place called: Honey Baked Ham Company 11845 Southwest Highway Palos Heights, IL, 60463 708-448-8507 Website: http://chicagolandham.com/products/honey-roasted-beef/ Not only where the Honey Baked Ham's good, but so was there Beef Honey Roast & their Pork Honey Roast. I don't have their recipe, but this is my version of it.

Steps:
- THE DAY BEFORE COOKING: Make the glaze, combine honey, brown sugar, dijon & cinnamon in a small saucepan. Simmer until sugar is dissolved.
- Place roast in oven bag, pour 3/4 glaze over roast (making sure it completely covers all sides). LET MARINATE OVERNIGHT TO 24 HOURS for flavors to penetrate into meat.
- THE DAY OF COOKING: Let roast sit out at least 4 hours to come to room temperature.
- Heat oven to 500 degrees F. In small bowl, mix salt, pepper & flour together.
- Take roast out of bag & discard marinade. Sprinkle the roast with flour mixture, making sure to get all sides. Place in roasting pan & put in oven.
- Cook: 4 1/2 minutes per pound - RARE. 6 minutes per pound - MEDIUM RARE.
- When done cooking, turn oven off & DO NOT OPEN OVEN OR REMOVE THE ROAST. Let oven completely cool, about 2 - 3 hours. The most important part of this is NOT OPENING OVEN!!!
- Serve with remaining honey mixture on the side for dipping.
- NOTE: This can also be done with Pork Loin.
