These are fairly easy, and my family loves them!

Steps:
- 1. Spray a 12x18 pan with cooking spray. (if you don't have that large of a pan, I've split them between two pans, using a normal cake pan, and a 8x8 pan)
- 2. Brown ground beef with taco seasoning and garlic, drain. Put in fridge to cool slightly (so the shredded cheese doesn't melt when adding ingredients together)
- 3. In a large bowl, stir together cooked ground beef, 2 cans enchilada sauce, 3/4 cup onion, 1 1/2 cans of the chopped green chiles, and 1 1/2 cups of cheese.
- 4. One at a time, arrange hamburger on the tortilla slightly off-center. Roll the tortilla and put in the pan, seam side down.
- 5. Once all enchiladas are rolled, pour the remaining can of enchilada sauce over tortillas, and top with remaining cheese, onion, and green chiles.
- 6. Bake at 375 for 20 minutes. Let sit for a few minutes before serving. Top with sour cream, if desired.
