Beef and Sausage Green Chili Casserole image

This is such an easy recipe and very delicious. Great served with tortilla chips and fresh hot sauce or Pico de Gallo. The mixture is great to use for stuffing bell peppers or making jalapeno poppers. A big hit with family and friends

Number Of Ingredients 15

1 pound(s) ground chuck
1 pound(s) ground sausage (breakfast or italian)
1 medium onion, finely diced
2 tablespoon(s) chopped garlic
1 teaspoon(s) ground cumin
1 teaspoon(s) ground oregano
- salt & pepper to taste
2 can(s) (28 oz) whole green chilies, drained (i use @ 12-15 fresh, roasted/peeled hatch green chilies)
1 package(s) (8 oz) cream cheese, room temp
1 pound(s) mexican cheese blend, shredded
OPTIONAL GARNISH:
- chopped cilantro
- sliced black olives
- choppedg green onion
- sour cream

Steps:

  • Brown the beef, sausage, onions, garlic, cumin, oregano, salt and pepper.
  • Drain if necessary and set aside.
  • Drain the whole green chilies and pat dry with paper towels (as well as you can).
  • Line the bottom of a 9 x 13 baking pan with peppers. Save a couple of peppers to chop and mix with the cream cheese.
  • In a separate bowl, combine chopped green chilies, softened cream cheese and 1 cup shredded cheese and mix well.
  • Combine meat mixture and cheese mixture and mix well.
  • Spread half of the meat and cheese mixture over the layer of whole peppers. Sprinkle some of the shredded cheese over the peppers and repeat with another layer of peppers, meat and the remaining cheese.
  • Bake at 400F for about 20 - 25 minutes, until light brown and bubbly.
