These are insanely good. the cream cheese off sets the saltiness of the beef, and the gherkin adds an unexpected crunch. I make these all the time and the recipe was given to my by a very dear friend more than 30 years ago

Steps:
- 1. Spread each slice of beef with about 2 teaspoons cream cheese.
- 2. Put a sweet gherkin in the middle.
- 3. Roll up and slice crosswise.
