BEANS, BOWTIES, SPINACH & CHEESE image

Number Of Ingredients 9

8 oz bowtie pasta (farfelle)
1 T olive oil
3 garlic cloves, crushed
3 plum tomatoes, diced
1 can (15 oz) great northern beans, drained and rinsed
1/4 c veggie broth
5 c fresh baby spinach
3/4 c mozzarella cheese, shredded
1/2 c parmesan cheese, grated

Steps:

  • Heat oil in large skillet. Add garlic and tomatoes; cook and stir until tomatoes are slightly soft, about 2 minutes. Add beans, broth, and spinach, and cook until spinach just wilts, stirring constantly. Season with salt and pepper. Meanwhile, cook pasta according to package directions. Drain pasta and add to skillet. Add in cheeses, toss lightly, and serve immediately.
