BAREFOOT CONTESSA TOMATO FETA SALAD image

2 pints cherry tomatoes (red or mixed colors)
3/4 cup red onion, fine dice
2 tablespoons good white wine vinegar or champagne vinegar
3 tablespoons good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons fresh basil leaves, chopped
2 tablespoons Italian flat leaf parsley, chopped
3/4 pound feta cheese (we're fond of the Israeli feta from Trader Joe's)

Steps:

  • Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta into 1/2-inch dice. Gently fold into the salad and serve at room temperature.
