Banana, Zucchini or Apple Bread image

This is a recipe that was passed down from my Mom. It can be used with Bananas, Zucchini or Apples. You can also substitute the vanilla with coconut flavoring or rum flavoring. Great way to get the kids to try zucchini. They will never know it is in there. We love this for breakfast or dessert.

Number Of Ingredients 15

3 eggs
1 cup brown sugar (packed)
1 cup granulated sugar
1 cup vegetable oil or 1 cup canola oil
2 cups bananas, mashed (or zucchini or apples)
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup of chopped nuts
3 cups all-purpose flour
1 cup sugar
1/2 cup water
1/2 teaspoon vanilla

Steps:

  • Heat over to 325 degrees. Beat eggs until frothy, stir in sugar, oil, bananas, and vanilla. Combine dry ingredients, stir into mixture until well mixed, add nuts, stir well and pour into two well greased loaf pans. Bake 1 hour. Set pans on cake rack and glaze.
  • Glaze directions: Bring to a good boil then add vanilla.
