Banana Nut Bread-Mom's Recipe(1950) image

My mom gave me this recipe- and she got it from her Aunt when she was 19..mom is 94 now and still can make the delicious bread..it freezes very well..but I never have any to freeze. My family loves this bread..

1/2 c margarine
1/2 c brown sugar,packed
1/2 c granulated sugar
2 large eggs
3 large very ripe bananas,mashed (about 1 cup or more)
1/3 c 2% milk
1 Tbsp apple cider vinegar
2 1/2 c all purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp baking powder
1 tsp vanilla extract
3/4 c chopped walnuts

Steps:

  • 1. Heat oven to 350º. Cut 2 pieces of waxed paper to fit bottom of two 8x5 loaf pans and then spray pans lightly. Combine milk and vinegar in a small cup;set aside.. Using you mixer with the big bowl;Cream butter and sugars together until blended. Add eggs ,bananas and vanilla..Mix well.
  • 2. In a large measuring cup add flour, soda,baking powder and salt..mix to blend. Add flour mixture alternately with the milk mixture, beginning and ending with the flour. Blend well after each addition. Stir in nuts by hand.
  • 3. Bake for 45-50 minutes and be sure to test with wooken toothpick for doneness. Bread will be slightly pulled away from sides of pan. Do not over bake. Remove from pans , peel waxed paper from loaves place on wire rack to cool and brush margarine on top and all sides while warm. This is the best ever...
