For the chopped candied ginger (crystallized ginger), I use ginger "chips" which are pre-chopped and come in a bag. You can find them in upscale grocers or natural food stores.

Steps:
- 1. Preheat oven to 350F. Coat a 9 x 5 inch loaf pan with nonstick cooking spray.
- 2. Peel and mash banana in a medium mixing bowl.
- 3. Add egg, vanilla, oil, milk, yogurt and sugar and mix until combined.
- 4. In a large bowl, sift flour, spices, soda, baking powder and salt.
- 5. Stir wet mix into dry mix until just combined.
- 6. Stir in cranberries and ginger.
- 7. Pour batter into prepared pan and bake 1 hour, or until wooden pick inserted in center comes out clean.
- 8. Cool in pan 10 minutes and turn out onto wire rack to cool completely.
