Banana Bread Pudding image

This is one of our favorite deserts. You can make this taste like Banana Foster by adding a teaspoon of rum to the sauce recipe.

Number Of Ingredients 16

4 c cubed day-old french or sourdough bread ( 1-inch pieces )
1/4 c butter or margarine, melted
3 large eggs
2 c milk
1/2 c sugar
2 tsp pure vanilla extract
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 c sliced firm bananas (1/4-inch pieces)
SAUCE:
3 Tbsp butter or margarine
2 Tbsp sugar
1 Tbsp cornstarch
3/4 c light corn syrup
1 tsp pure vanilla extract

Steps:

  • 1. Place the bread cubes in a greased 2-qt. casserole; pour melted butter over and toss to coat
  • 2. In a medium bowl, lightly beat eggs, milk,sugar, vanilla, cinnamon, nutmeg and salt.
  • 3. Stir in bananas
  • 4. Pour over bread cubes and stir to coat.
  • 5. Bake uncovered at 375 for 40 minutes or until a knife inserted near the center comes out clean. Remove from oven and set aside
  • 6. Meanwhile, for sauce, melt butter in a small saucepan.
  • 7. Combine sugar and cornstarch; add to butter
  • 8. Stir in milk and corn syurp. Cook and stir over medium heat until the mixture comes to a full boil. Boil for 1 minute.
  • 9. Remove from heat; stir in vanilla.
  • 10. Serve warm sauce over warm pudding
