BAKED TOFU MEATBALLS image

3 tablespoons extra-virgin olive oil, divided
1 14-ounce package firm tofu, drained, pressed and mashed
2 tablespoons walnuts, toasted and finely ground
1/2 cup wheat germ
1/4 cup chopped parsley
2 tablespoons light soy sauce
2 tablespoons nutritional yeast (optional)
1 tablespoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon oregano

Steps:

  • Oil an 8-by-8-inch square or round baking dish with 1 1/2 tablespoons olive oil. Preheat the oven to 350 degrees. Mix the mashed tofu together with the walnuts, wheat germ, parsley, soy sauce, yeast, onion powder, garlic powder and oregano. Shape into 16 1 1/2-inch balls and arrange in the prepared pan without touching each other. Drizzle with the remaining 1 1/2 tablespoons olive oil. Bake, turning the meatballs every 10 minutes, for 30 to 35 minutes, until they're evenly browned and crispy. (Be careful when turning, especially during the first few minutes, as they'll be soft and will crumble if handled roughly.) Per serving (4 balls): 219 calories, 14 grams fat, 2 grams saturated fat, no cholesterol, 11 grams carbohydrates, 14 grams protein, 270 milligrams sodium, 4 grams fiber.
