Steps:
- 1. Preheat oven to 375°. 2. Combine shrimp, olive oil, lemon juice, ¼ cup chopped basil, garlic, Cavender's, and pepper in a large plastic bag and toss to coat well. Add a little more olive oil if needed. Place mixture in a 9 x 13 ÂÂinch baking dish coated with cooking spray. Stir in sauteed onion and drained tomatoes. Bake at 375° for 12 minutes, remove from oven and stir, moving less done shrimp to outer edges, add cheese and bake 10 more minutes. Top with fresh chopped parsley and remaining ¼ cup chopped basil. Serve immediately. Works well over cooked orzo. Orzo with fresh herbs: Cook 1 cup orzo pasta according to package directions, omitting salt and fat. Drain; toss orzo with 1/4 cup chopped fresh basil, 2 tablespoons chopped fresh parsley, 1 tablespoon extra-virgin olive oil, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper.
