Baked Pumpkin image

I love making this for Thanksgiving dinner. It tastes so much like pumpkin pie, but without the crust. Everyone loves it!

Number Of Ingredients 13

1 lb can(s) pumpkin (2 cups)
1 cup(s) sugar
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) salt
1 teaspoon(s) cinnamon
1/2 cup(s) flour
2 - eggs
1 pinch(es) baking soda
1 can(s) evaporated milk
ALSO
1/2 stick(s) margarine
1/4 cup(s) sugar
1/8 teaspoon(s) cinnamon

Steps:

  • Beat eggs. Add everything else. Melt margarine in casserole dish. Pour in the mixture. Mix 1/4 cup sugar and 1/8 tsp cinnamon and sprinkle over top.
  • Bake at 450 degrees 25 to 30 min. Custardy, brownish on outside, may crack, some wiggle in middle but will set.
