Baked Potato Casserole Recipe - (4.6/5) image

Number Of Ingredients 10

2 1/2 pounds red potatoes, cooked and cubed
1/2 pound sliced bacon, cooked and crumbled
1/2 pound cheddar cheese, cubed
2 cups shredded cheddar cheese
1/2 large onion, finely chopped
1/2 cup mayonnaise
1/2 cup sour cream
1/2 T minced chives
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a very large bowl, combine potatoes and bacon. In another large bowl, combine the remaining ingredients; add to potato mixture and gently toss to coat. 2. Transfer to a greased 4 baking dish. Bake, uncovered, at 325° for 50-60 minutes or until bubbly and lightly browned.
