Baked Pineapple Casserole image

A different, delicious side dish that goes great with ham, pork or turkey.

Number Of Ingredients 6

2 can(s) (20 ounces) pineapple chunks, tidbits or crushed pineapple, drained, but juices reserved
1/2 c sugar
5 Tbsp flour
1-1/2 c grated sharp cheddar cheese
1/2 c butter, plus 1 tsp., melted
1-1/2 c crushed ritz crackers

Steps:

  • 1. Grease a 2 quart casserole dish with 1 tbsp. butter
  • 2. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple and stir till well combine. Pour the mixture into the prepared casserole dish.
  • 3. In an medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice., stirring with a rubber spatula, until evenly blended.
  • 4. Spread crumb mixture on top of pineapple mixture. Bake at 350 degrees for 25 to 30 minutes, or until golden brown.
