Baked Herb Omelet image

Number Of Ingredients 10

1 medium onion, chopped (1/2 cup)
1/2 cup shredded part-skim mozzarella cheese (2 ounces)
1 1/2 cups skim milk
1 cup fat-free cholesterol-free egg substitute or 2 eggs plus 3 egg whites
1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/4 teaspoon salt
3/4 cup salsa

Steps:

  • Heat oven to 350°. Spray pie plate, 9x1 1/4 inches, with nonstick cooking spray. Sprinkle onion and cheese in bottom of pie plate. Place remaining ingredients except salsa in blender. Cover and blend on medium-high speed about 30 seconds or until smooth. Pour into pie plate. Bake about 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes. Cut into wedges.
