4 English muffins, split
8 slices Canadian bacon
6 eggs
1 cup mayonnaise
2 tablespoons lemon juice
1 teaspoon dry mustard
1 dash Tabasco sauce

Steps:

  • Grease a 9 x 15 pan.
  • Butter muffins and place in baking dish.
  • Cover with bacon.
  • Mix eggs and balance of ingredients.
  • Pour over bacon and muffins, soaking all.
  • Cover.
  • Keeps in fridge 2 days or can be frozen for 2 months.
  • To bake:.
  • Bake 350F 45 mins.
