BAKED CHICKEN WITH TOMATOES AND OLIVES image

1 lb plum tomatoes; halved if large
1/2 c. pitted green olives
8 cloves garlic; quartered
2 T olive oil
1 T fresh thyme
4 bone-in; skin-on thighs

Steps:

  • heat oven to 425 with rack on top. toss tomatoes, olives, garlic, oil, and thyme in 3 quart baking dish. season thighs with salt and pepper. nestle chicken skin up in veggies bake till chicken is browned and at 165F, approx 40-45.
