BAKED CHEESE POLENTA image

Number Of Ingredients 6

4 cups vegetable broth (seasoned with 2 tsp dried rubbed sage, 1/8 tsp thyme, parsley and basil)
1 1/2 cup cornmeal (I prefer yellow)
1 cup shredded mozzarella cheese
1 cup monterey jack with jalapenos
1/2 cup parmesan cheese
1/3 cup heavy cream

Steps:

  • Add broth to a heavy sauce pan, gradually add cornmeal, stirring constantly, on med heat. Cook until cornmeal becomes thick and pulls away from side of pan. About 10 min. Pour half of cornmeal into a 8x8 pan (ungreased). Mix the three cheeses in a seperate bowl and sprinkle half of cheeses over polenta. Pour rest of the remaining polenta on top of the cheese and top with remaining cheese. Drizzle heavy cream over entire polenta and bake in 350 oven for 30-35 minutes until cheese is bubbly and starting to brown. Let sit for about 5 minutes before serving.
