Baked Cauliflower & Potatoes - Veggiecurean image

Baked Cauliflower & Potatoes Cauliflower and potatoes are such a great combination. I love to make this dish - it takes about 10 minutes to - Veggiecurean

Number Of Ingredients 10

1 large cauliflower head ((washed & cut into bite-sized florets))
1 pound potatoes ((peeled, washed & cut into 1-inch pieces))
1 cup frozen peas
2 tablespoons olive oil
2 inches fresh ginger ((peeled & grated))
1 tablespoon ground cumin
1 teaspoon ground turmeric powder
1 teaspoon garam masala
1/4 cup water
1 handful fresh cilantro leaves ((chopped))

Steps:

  • Preheat oven to 400 degrees F.
  • In large bowl, mix all ingredients except cilantro leaves.
  • Line cookie sheet with baking paper and bake mixture for 25-30 minutes, stirring halfway through so potatoes and cauliflower roast evenly.
  • Serve immediately with cilantro garnish on top.
