BAKED ASPARAGUS WITH WALNUTS image

2 - 3 pounds asparagus (thin spears)
salt and pepper
1 tablespoon butter
Walnut topping:
3 tablespoons olive oil
1 1/2 tablespoons lemon juice
salt and pepper
4 tablespoons chopped walnuts, toasted at 350 degrees until golden, about 10 minutes

Steps:

  • Preheat oven to 300 degrees. Break off woody stems of asparagus. Place in a greased 9 x 13 inch Pyrex dish. Sprinkle lightly with salt and pepper. Dot with butter. Cover will foil and bake for 30 to 35 minutes until tender but still crisp. Topping: In a small bowl, whisk together oil, lemon juice, salt and pepper. Spoon topping over asparagus and sprinkle with walnuts.
