Baked Alaska Meatloaf image

For those of you who have ever had a Baked Alaska dessert, you know the joy of cutting through the meringue to find ice cream. WELL, no ice cream here...but still the surprise of finding meat under the potatoes and cheese. Not sure where I got this recipe, but we eat it quite a bit.

Number Of Ingredients 7

1 pkg brown gravy mix
1 1/2 lb ground beef
2 tsp minced onion
1/4 tsp pepper
1 tsp dry chives
4 servings instant mashed potatoes or leftover real potatoes
1/2 c cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees. Mix gravy mix, ground beef, onion, and pepper in a large bowl. Shape into a loaf and place in a loaf pan.
  • 2. Stir chives into mashed potatoes and spread over the top of the meatloaf.
  • 3. Bake 55 minutes or until cooked through. Sprinkle on the cheese and bake for an additional 2 minutes or until cheese melts.
