Bacon Wrapped Chicken For One image

This is an easy dish to put together. You can use any cheese you prefer. I chose pepperjack. I will try blue cheese next time. Serve with your favorite sides. I chose asparagus and macaroni with tomatoes.

6 ounce(s) chicken, boneless and skinless
1 1/2 tablespoon(s) cream cheese
1 1/2 tablespoon(s) cheese, shredded
2 teaspoon(s) chopped green onion
2 slice(s) bacon

Steps:

  • preheat oven to 375° slice chicken breast in half length wise. tip: partially frozen chicken is eaiser to slice. pound breast for a thinner slice. you can and a few dashes of salt and pepper at this point. I did not because of the rich cheese and bacon it is very flavorful without it.
  • mix together cream cheese shredded cheese and green onion. fill each slice with half of filling and roll breast wrap with 2 slices of bacon and secure with tooth picks. Be sure to wrap one slice of bacon lengthwise over the ends so filling doesn't ooze out.
  • place chicken roll ups on a lighty sprayed baking pan. bake for 30 minutes. broil top to your preferred crispness. turn each breast over and repeat to crisp up bottom.
