Bacon Pancake Dippers image

My family usually eats their bacon first and then wants more when they get to the main breakfast food. This way, they can have both at the same time. You can always freeze some to warm up later for a quick snack or breakfast.

- pancake mix
- center cut bacon
- syrup

Steps:

  • Cook desired amount of bacon and set aside.
  • Mix pancake batter according to package directions, making desired amount of pancakes. Will need enough batter to match the amount of bacon slices.
  • Pour batter into a squeeze bottle with a big enough hole for the batter to pour from. I use an inexpensive plastic red picnic ketchup bottle.
  • Lightly grease and heat griddle. I heat mine to 300 degrees.
  • Squirt batter in a long oval shape a little longer and wider than the bacon and place a slice of cooked bacon in the center. Lightly press bacon into the batter.
  • Squeeze more batter over the bacon. I just make a wiggle line over the bacon. This is to protect the bacon from the griddle when you turn the pancake dipper over.
  • Cook until the batter starts to bubble then turn over and cook a few minutes longer.
  • Serve with warm maple syrup or any other syrup you may choose.
  • Enjoy!
