BACON MUSHROOM SWISS MEATLOAF image

12 oz bacon, diced
4 med white mushrooms, diced
1 small onion, finely chopped
1 1/2 lbs. extra lean ground beef
1 egg
1/4 cup evaporated milk or half and half
6 oz shredded Swiss cheese
1/2 cup cornflake crumbs

Steps:

  • Preheat oven to 350 degrees. Crisp bacon, drain and cool. Remove most of the fat from the pan and saute the mushrooms and onions in it until tender. Cool slightly. In large bowl, mix the beef, egg and milk.Add the mushroom/onion mix, all but a few spoons of the Swiss cheese and all but 1 tbs of the bacon bits. Add the crumbs and mix well until blended. Shape into a loaf and place in large loaf pan. Bake at 350 degrees for 1 hour or until cooked through. (It takes about an hour and 20-25 minutes in Pampered Chef Loaf Crock due to size). Drain fat from the pan and sprinkle the reserved cheese and bacon on top and bake for an additional 5 minutes until cheese is bubbly. Allow to rest and cool before slicing. 4-6 servings.
