BAKED TILAPIA FILETS WITH LIGHT FRENCH ONION SAUCE image

5 wedges of The Laughing Cow© Light French Onion
4 (6-ounce) tilapia filets
3 tablespoons olive oil, divided
½ cup diced yellow bell pepper
½ cup diced red bell pepper
1 cup of diced zucchini
1 cup half-and-half
3 tablespoons chopped fresh chives, plus more for garnish if desired
Salt and pepper

Steps:

  • Directions: Preheat oven to 350 F. Season tilapia with salt and pepper and bake for 12 to 15 minutes until fish is opaque and flakes easily with fork or in your mouth. Meanwhile, heat 1½ tablespoons olive oil on medium-high heat in a large sauté pan. Add peppers and zucchini and sauté just until tender. Remove vegetables and set aside. Keep them in a safe place so they do not get eaten in the mean time. Reduce heat to medium and add remaining 1½ tablespoons oil. Gradually whisk in half-and-half. Add cheese wedges and stir mixture until cheese is melted and sauce begins to thicken, about 5 minutes. Stir in chives. Add salt and pepper to taste. Serve tilapia filets over vegetables, and top with sauce. Garnish with chives. Get ready to impress your company, even if it is just you.
