Bacon Cheddar Mini Biscuit Muffins image

7 1/2 oz corn muffin mix
1/3 c self-rising flour
4 oz bacon, cooked and chopped
1 c cheddar cheese, shredded
1 Tbsp fresh parsley, chopped
1 Tbsp fresh chopped chives
1 tsp garlic powder
1 tsp onion powder
1 c milk
1 large egg
3 Tbsp bacon fat

Steps:

  • 1. preheat oven to 335 degrees. grease mini muffin molds with some of the bacon grease.
  • 2. in a mixing bowl, combine ingredients 1-8, mix well. in a separate bowl, combine ingredients 9-11. mix well. combine the wet ingredients to the dry ingredients. mix well
  • 3. put 1 tbsp of the muffin mixture in 24 mini muffin molds. bake for 12-15 minutes or until golden brown. remove and place on a cooling rack
  • 4. Drizzle with butter pecan maple syrup or honey and extra butter!
