FOR BRUSSELS SPROUTS
2 lb fresh or thawed frozen Brussels sprouts, cut in half
4 Tbsp olive oil
sea salt
freshly cracked black pepper
FOR THE MUSTARD SAUCE
1 lb thick cut bacon-cooked, crumbled-set aside-reserve 4 Tbsp of bacon drippings
4 Tbsp diced shallots
3 Tbsp Dijon mustard
drizzle of olive oil
FOR THE TOPPING
1/4 c Blue cheese crumbles or Feta, or goat cheese
4 Tbsp toasted almonds pecans or walnuts

Steps:

  • 1. Preheat oven to 375. Coat Brussels in olive oil, salt & pepper.
  • 2. Roast until very deeply golden brown and tender (around 25-30 minutes).
  • 3. In a frying pan, fry bacon. Set aside cooked bacon and crumble. Reserve 4 Tbsp of bacon grease.
  • 4. In a warm pan, add shallots and cook until tender absorbing bits from pan.
  • 5. Whisk in mustard and reserved bacon grease; remove from heat.
  • 6. Drizzle olive oil to form a dressing.
  • 7. In a serving dish, toss Brussels with dressing.
  • 8. Crumble bacon and blue cheese on top. Serve warm. Enjoy!
