Steps:
- In wok over moderatly high heat, add oil and saute 1/3 garlic, 1/3 ginger and 1/3 white parts of schallions 1-minute until fragrant.
- Add 1/3 bok choy and sear until tips wilted 3-minutes.
- Sprinke with 1/4 teaspoon salt ant 1/4 teaspoon pepper.
- Transfer to large serving dish and cover to keep warm.
- Repeat two more times for a total of 3 batches.
- garnishwith green parts of scallions and serve.
